Sounds like you already have a big list. Do you want to stay in Manhattan or venture out into the "outer boroughs?" Do you prefer indoor or outdoor activities? A lot depends on how much you want to pack into each day, either to concentrate on one area or to travel around a bit.
There’s the Statue of Liberty, walks along the waterfront (and many choices for that, too), and the many beautiful subway stations with their wonderful mosaics and other art.
I love toys, so I go often to FAO Schwarz, the big toystore on Fifth Avenue. They let you take photos there, which is fun.
Neighborhoods in Manhattan I enjoy walking around taking photos include: Soho, Lower East Side, the East Village, Greenwich Village, Upper West Side, Chelsea. In Queens, Long Island City is nice, and Roosevelt Island has wonderful views of Manhattan. There’s South Street Seaport and the free ferry ride to Staten Island and back, or you can pay for a Circle Line boat tour.
There are loads of parks besides Central Park. The new High Line on the west side is wonderful and I’m partial to Madison Square Park. Union Square Park is great for people watching. And that’s just Manhattan. Over in Brooklyn, there’s the Botanical Gardens and the Brooklyn Museum, as well as Prospect Park. Queens has Flushing Meadows Park with the remnants of the 1964/65 World’s Fair, including the Unisphere. the Bronx is known for its zoo.
Art is everywhere. A lot can be found in parks. Madison Square Park usually has exhibits, one artist at a time. Art museums can be fussy about photography, though my favorite museum for pictures is not an art museum, but the Museum of Natural History. Loads of photo ops there.
There’s also the Cloisters in Upper Manhattan.
